Taroona Spanish Mackerel is a whole food. Nothing is added or taken away when we prepare our fish for market. By using natural methods, we preserve all the wonderful, rich flavour of the fish.
Our catch is immediately chilled and the processed into fillets or prepared for cutlets, ensuring maximum freshness and flavour. Hand processing of fish is a time- honoured tradition in the Northern Territory and we've been perfecting this method since starting the business in 1987.
Our supply chain from ocean to consumer is designed to preserve freshness and flavour every step of the way. our frozen product is snap frozen immediately after processing, ensuring a product as good as fish straight from the ocean- a necessary step given our tropical climate and the vast distances we travel for our fish operations.
Our fresh product is fish caught, processed and chilled in the last two days of a fishing trip from one of our vessels. The other vessel is dedicated to short fishing trips supplying fresh, chilled product only.
